Caramel Fudge Bites
In a world filled with artificial preservatives, coloring, and ingredients, it is not often you find this Caramel Fudge Bites recipe this enjoyable with only three ingredients! Perhaps even more impressive is that the ingredients used are also clean and simple. Medjool dates are a wholesome dried fruit; dark chocolate is often made with cacao, milk, and sugar, only, if you choose the brand wisely.
Finally, our Once Again Unsweetened and Salt-Free Tahini has just one delicious ingredient: sesame seeds.
Tahini often is used as an ingredient for homemade salad dressings; it is also a key ingredient in hummus and may be used as a healthy alternative to butter in a variety of recipes. Surprisingly, sesame seed paste, or what is better known as tahini, when combined with sweeter ingredients, yields a caramel-like flavor so wonderful that your taste buds will beg for more, and you will positively need a scrumptious second bite. Since we strive to use as many natural ingredients in our recipes as possible, our sugar here is delivered by a natural source: dates! They have just the right amount of fructose and are loaded with nutrients including fiber and essential minerals.
Ready to try it yourself? No skills required, only a blender or food processor and 10 minutes to spare. The Caramel Fudge Bites recipe below includes a chocolate shell that is completely optional. Simply 3 clean ingredients come together to create this delicious fudge that is surely one of a kind! You won't believe how sweet and creamy these are. An easy vegan and gluten free recipe.

Ingredients
- 12-13 Medjool dates

½ cup of Once Again Tahini
- ½ cup of dark chocolate chips
Directions
- Place dates in warm water and check for pits. Allow them to soften in warm water for 15 to 20 minutes.
- Drain water and combine them with tahini in a food processor or high-powered blender. Spread mixture over parchment paper at the thickness you desire for your fudge bites.
- Place in freezer for one to two hours.
- In a small bowl, melt chocolate chips in a microwave, or you may also melt them over a boiling water bath.
- Cut fudge bites into squares and dip them in chocolate completely, covering each one. Return them back to the freezer to set and then enjoy!
- Save leftovers in a plastic-sealed container for up to two weeks. Makes six-12 squares, depending upon the size desired.
