Ingredients

1 tablespoon Once Again Tahini
½ teaspoon lemon zest + 2 tablespoons lemon juice (from 1 lemon)
1 clove garlic, minced
½ teaspoon dried oregano leaves
2 tablespoons extra virgin olive oil
Salt and pepper
2 jarred roasted red peppers, chopped
½ cup chopped cucumbers
½ cup pitted kalamata olives
1 cup canned chickpeas, drained and rinsed
1 cup chopped romaine lettuce
½ cup finely diced or crumbled feta cheese
2 empty, clean Once Again Jars
Directions
Whisk tahini, lemon zest, lemon juice, garlic and oregano in a small bowl (or in the bottom of a nearly empty or empty jar). Gradually add olive oil, whisking to combine. Thin with up to 1 tablespoon water to make a pourable consistency, then season with salt and pepper. Divide dressing among the jars.
Divide red pepper, cucumber, olives and chickpeas among jars. Top each with romaine lettuce then feta cheese. Cover and refrigerate and enjoy within 3 days.
