                1 tablespoon Once Again Tahini
- ½ teaspoon lemon zest + 2 tablespoons lemon juice (from 1 lemon)
- 1 clove garlic, minced
- ½ teaspoon dried oregano leaves
- 2 tablespoons extra virgin olive oil
- Salt and pepper
- 2 jarred roasted red peppers, chopped

- 1 cup chopped romaine lettuce
- ½ cup finely diced or crumbled feta cheese
- 2 empty, clean Once Again Jars
Directions
- Whisk tahini, lemon zest, lemon juice, garlic and oregano in a small bowl (or in the bottom of a nearly empty or empty jar). Gradually add olive oil, whisking to combine. Thin with up to 1 tablespoon water to make a pourable consistency, then season with salt and pepper. Divide dressing among the jars.
- Divide red pepper, cucumber, olives and chickpeas among jars. Top each with romaine lettuce then feta cheese. Cover and refrigerate and enjoy within 3 days.
