Creamy Herb-y Cashew Dip

Featuring Once Again Cashew Butter, a few fresh herbs, a bit of garlic and some bright acidity from fresh lemon juice, this creamy dip pairs perfectly with fresh vegetables.

Ingredients

1/4 cup Once Again Cashew Butter, room temperature
2 cloves garlic, finely minced
¼ cup finely chopped fresh chives
1 tablespoon finely chopped fresh dill
¼ cup fresh parsley, finely chopped
¼ cup water
2 tablespoons fresh lemon juice
For serving: array of cut vegetables including cucumbers, carrots, baby peppers, tomatoes, radishes, endive leaves, and whole grain crackers and breads
Directions
Place all ingredients in a large mixing bowl and stir to combine.
Transfer dip to a small bowl and add to a platter filled with your favorite vegetables, crackers and bread for serving.
Cover extra dip and refrigerate and enjoy within 3 days.
Recipe Note
To make an extra-creamy version, combine all ingredients in a small food processor and blend until smooth.
