Cashew-Coconut Snack Bites

These delicious little bites are the perfect healthy treat to have on hand for when you need a quick pick-me-up. Made with just a handful of simple ingredients like cashew butter, shredded coconut, and almond flour, they're packed with healthy fats. Plus, there's absolutely no baking required!
 
                  Ingredients
- 
                1 cup Once Again Cashew Butter, room temperature 
- 1/4 cup maple syrup
- 2 teaspoons vanilla extract
- 1/4 cup coconut or almond flour
- 1/4 cup ground flax seed
- 1/4 teaspoon kosher salt
- 1/2 cup mini chocolate chips
- 1/2 cup unsweetened shredded coconut, divided
Directions
- Combine the cashew butter, maple syrup and vanilla in a large bowl. Stir the coconut (or almond) flour, flax and salt. Fold in chocolate chips and ¼ cup of the shredded coconut. 
- Shape mixture into 10 balls (about 2 tablespoons each) and place on a parchment-lined plate or baking sheet. Place remaining ¼ cup coconut in a shallow bowl. Add bites, one at a time, and roll to coat them evenly with coconut.
- Cover and refrigerate at least 20 minutes before enjoying.
- Store in a sealed container and enjoy within one week.
